What are you talking about? Sheer Cold + Fissure Walrein is not an illegal set. The Battle Video shit is just buggy. Sometimes the upload fails because of an illegality, sometimes it just fails for no reason. Also when sun/moon get patched, the vids from previous versions are forever broken which fuckin sucks.

Fantastic troll set by Gamefreak. Sleep Talk + double OHKO moves, with auxiliary Lax Incense for extra hax bullshit. Either kill it as fast as possible or begin your involuntary Russian Roulette game.

You could also PP-stall it out with a Flying and an Ice Type Pokemon, as of gen VII Ice types are immune to Sheer Cold. This is definitely the most consistent counterplay, however there are few Ice Types that are strong Battle Tree contenders.

With Salamence you get four substitutes, and as long as you do not damage it before you are at +6 with Dragon Dance and can OHKO it, it can't use Rest and Sleep Talk.
The probability of Walrein hitting at least 5 Sheer Colds is something like 0.6% (if my math is not wrong,
P = (3^8) / (10^8) (the probability of each outcome) * 256 (the number of all possible hit/no hit combination) * 93 (the number of 5+ hit combinations) = 1.562/256 = P = 0.006
so you have a good chance of winning if you play extremely safe.
