Why do people use Baton Pass without any stat boosts? What's the difference between using Baton Pass and just switching out?

Baton Pass can go after the opponent moves so your next Pokemon switching in is safe from damage.

It's good on Pyukumuku since it allows safe switch in. Even better it you Psyche Up boosts first, but doing it at +0 is still very useful.

If you're slower than your opponent, you can switch something in without your switch-in taking a hit in the process.
If you just switched, you would not know if your opponent would also switch.
If you baton pass, you know whether your opponent switches, and if he does you can choose the perfect counter.

for some mons like celebi, it avoids pursuit killing you. for choiced mons, its because they dont have any other way to pivot;-;

short answer: if the enemy switches, you know before batton passing, and can choose accordingly a counter.
If he does not switch and you are slower, you take the hit, then bring in safely a fragile sweeper to setup or kill

I should add the obvious: pretty much any other muhmentum move is going to be generally better, since you will do damage/drop stats and you won't be forced to BP Intimidate if the opponent switches to a mon with that. The main advantage of BP is that it doesn't fail(outside of taunt), unlike Volt Switch against immune mons or any of the other moves when the opponent uses Protect. Generally, BP on its own isn't really worth a slot, but some things don't get U-Turn and your team might really value those opportunities to get frail sweepers out reliably.
