Espeon and Umbreon would be coolest but I agree that is also the most basic bitch combo there is.

Shiny Umbreon would look cool with a Vaporeon or a Leafeon for a partner. Jolteon is also really awesome. Glaceon is alright. Just don't use Flareon or Sylveon.

Especially considering it competes with flareon for the worst viability. GF just hates ice, accept it and move on

Vaporeon if you want to stall with both.
Espeon/Leafeon/Glaceon/Flareon/Jolteon/Sylveon are better for attacking if you want contrast.
Umbreon is weak to Fighting, Fairy and Bug. Flareon resists two of these types.

Oh yeah Sylveon also resists Bug and Fighting. It would definately be my choice then.
