when it's actually enjoyed by them (generally portrayed to be at least) and is very tactical with both the Pokemon and trainers learning and coordinating techniques

I remember reading that the creators wanted it to feel like martial arts, thus how you go to gyms and leagues. You are the pokemons sensei, and thus they try to fight honorably, taking turns, and working through pain to better their mind and body. It's just a different mindset, we don't really have much here like that which isn't military or gang related, so everyone makes the jokes about it being dog fighting.
