I think there was was love put into Sun and Moon, but I agree on the lack of polish. They rushed it for the holiday season. It's a good game but it could've been much better. After the likely DP remakes, I wish they'd spend at least 3 years on the next one.
I'm not sure if Iwata would have made it better, or suggested more time be spent on it, though I do miss him.

Sun & Moon does offer unique things, they're just not all that big or significant.

The best things about Sun/Moon are the small things. New move animations, graphics are updated, and etc. The attention to detail is what I like most about these games.

Iwata didn't contribute anything except compression tools in gen 2. And even that people exaggerate.
