There were a couple last generation for various stones, and this generation added a new stone entirely with two evolutions to go with it.

Leaf Stone predated Leafeon so they cover their ass as to why the Leaf Stone didn't work on Eevee originally. Glaceon predates the Ice Stone. Same reason that any baby Pokemon introduced after gen 2 for a Pokemon that was existed beforehand requires an Incense to breed. Had to explain why Snorlaxes in the daycare weren't popping out Munchlax: you didn't have the right item in that game.
The entire breeding system needs to be retconned and retooled.

Baby pokemon are pointless unless it's giving strong late game pokemon a pre-evolution that you can catch early in game.

eviolite killed any chance of cross-gen evolutions. pre-evos you could probably get away with, but something originally intended to be fully-evolved suddenly getting a 50% boost to defense and special defense (porygon2, chansey, dusclops, tangela, rhydon) makes it ridiculous.

None of them could learn those moves naturally though, which they probably figure is enough. Piloswine could only learn Ancient Power through breeding, Aipom couldn't learn Double Hit because it's a gen 4 move, Tangela and Yanma couldn't learn Ancient Power at all. Lickitung could learn Rollout via TM a while prior, but that still isn't its default learnset.

Stones are really cool but underused. Thunder Stone has like three entire families that evolve with it, what gives?

Problem there is they both have Alolan base forms as well. Probably just not have them natively or have some sort of Trophy Park type thing for them at best.
The other complication is that Alolan base forms are always produced by any parents in any forms unless an everstone is used for the non-Alolan parents in SM. Those without an Alolan base form will also always evolve into their Alolan evolved forms in SM, regardless of what game they originated in (according to the hackers). This implies a certain design philosophy on Game Freaks end, which is that the forms are tied to the game they are produced in, and therefore the region. In a way similar to Vivillion forms, though those are tied to what region your 3DS was set to when you began the game.
Who knows how they'll handled Alolan forms in future games, given all that?

Dont know why people still dont get that each eeveelution exists to show off a new evolution technique or game feature. Gen 1 had the stones, Esp/Umbreon showed off the day/night cycles and friendship, Leaf/Glaceon showed off location-based evolutions, and Sylveon showed off Amie and the Fairy type.
Leafeon and Glaceon evolve the way they do because their advertising a certain feature, not because it would ruin continuity or some bs.
