It's making way too much money for them to simply stop releasing them like that. Mario is much older and still going strong. Zelda and Metroid too.

Digimon is still a series that has a large fanbase and way more of those than Pokemon.

Pokemon still needs ways to go.

They have the 3D Pokemon models, that'll last for quite a while. It's not like they care about "next-gen graphics." They have the database for everything (abilities, Pokemon, moves, interactions), so it's not like they have to reprogram it every gen. The most resource consuming part is new trainer models, and even that may be standardized if they choose to stick with a 3D style for more than one gameset.

It's easy if you've been with Pokemon for the 20 years. And that's why they only had 300 in SM, so kids don't get overwhelmed.

They'll have to stop at 999 since that's the highest 3-digit number the national dex can handle. They're already trying to postpone this by making gimmick form mons that don't take up extra dex slots (megas, Alolan forms, Wishiwashi, etc), so my guess is that they won't hit the cap until gen 9. And after that they'll probably just throw out the national dex entirely so they can continue making new mons without worrying about having too many mons.
