How do I know how much is a good/bad stat?

It depends.
>For offenses, minimum stat is 120 w/ boosting moves, or 130 without (ignoring abilities like Huge Power or Sheer Force)
>For defenses, 75/100/100 is good mixed bulk, and at least 140 in one defense stat if you're focusing on one kind of defense
>For speed, either high speed (110), or really low speed for trick room (40). Having a middle speed stat like 70 is a curse

For HP and Defences it honestly depends too much on other factors like Type and Ability. But generally, base 90 across the board is above average, and then you just mess around with the numbers.

For attack stats, the best attack stat should be above 100.

For speed, base 90 is good but you'd want 110 for a sweeper.

Too slow for regular use and too fast for even shitty gimmicks like Trick Room.

Hope you can tank a hit or something.

100+ speed was the standard for offensive Pokémon, lately it's become like 110+. You can scrape by with a scarf on stuff like Landorus-T but that's not that mon's strongest set.

Attacking stats can be patched up with items or abilities, see Starmie and Greninja with their shitty SpA running offensive sets with good abilities and items.

Defensive stats are more dependant on your resistances IMO. See shuckle

Not 90-95? Calm Mind Clefable is amazing. Sylveon hits way harder but Clefable is the preferred Calm Mind sweeper.

That's largely because Clefable has reliable recovery, a better movepool, and two good abilities that shut down things that can prevent a sweep.

Good defenses is usually 90/90/90 or more, but typing plays an important part.
Speed depends on the role. You need 101+ to be able to sweep.
Offense varies a lot because of boosting moves and abilities. For example serperior can sweep despite 75 spA because of Contrary and Azumarill is strong because of Huge Power despite having 50 att. You usually want 100+ though.

You can't disregard a pokemon just because it has bad stats though. Many of the most dangerous pokemon in the game have shitty stats on paper but have some kind of powerful gimmick via abilities or moves. See Aegislash, Ninetales, Azumarill etc.
