About to start catching the tapus. Any advice on move sets and natures?

Modest for lel, unless you want a support set, then timid. Timid for kek.

Here's what most people go for in terms of natures.
Koko: Timid for fully special set, Naive/Hasty for Mixed. You can go Jolly, but it's best physical STAB is Wild Charge.
Lele: Modest. Timid is an ok choice too.
Bulu: Adamant. Jolly is very meh.
Fini: Bold. You can go Timid or Modest if you want to make it offensive.

Is running a mixed nature not worth it on koko? I'm not interested in running Wild charge.

It is ok, but the main physical attacks you will most likely be running are Brave Bird and U-Turn.
Mixed Koko isn't bad. It's just that fully special Koko is the most common.

Since they all have the same base HP it might be worth getting a final gambit mon, Riolu is the only one in S/M that comes to mind but seems a bit overkill with bottle caps available.

You use Fini like you would use Suicune. It runs Defog, Taunt, Calm Mind and either Surf or Moonblast. You can ditch Defog outside of competitve battles since hazards aren't as common in stuff like the Battle Tree.

Defog is a really rare move in terms of in-game standards. I'd rather keep on Fini.
