I think it's been implied many times that the Tapus let themselves be caught, and only battles you to see if you're worthy. Especially for Tapu Koko, I think it prefers hanging around the Champion and getting to battle stronger trainers instead of just hanging around Melemele all day. And even if the Mc doesn't use any of the Tapus, they get to vacation in an island resort instead.
Considering that they're guardian deities and also fair folk, the mc's life span is probably not that long for them, and as soon as they die, the Tapus can go back to doing their duties. For them it's probably like a small vacation, and it's not like the Alolans can do anything about it because they know their guardians are fickle Gods.
