No, you use their ability as a bonus when the partner dies, you don't make it die on purpose. So just pairing Muk with pokémon with ok, abilities is good enough.

I personally prefer gluttony over PoA though, 50% hp heal is way too good to pass down.

Levitate on A-Muk is probably pretty good.
Not sure about Handegg Lemur either. Huge Power?
I don't think you should purposely KO your ally either, use it as a threat. For example, pairing M-Mawile with Passimian forces your opponent to either focus on the immediate threat of Mawile or the long term threat of Passimian.

How should a passimian be built to use contrary best?
If not bulky its SpDef might let it down, if not fast it might die before getting a close combat.
With 80 base speed I'm not even sure jolly and full investment will accomplish anything, so maybe full HP and SpDef?
