Because other trial captains are waifu/husbando material with their own "scenario" (as in gal game term). Sophocles however isn't therefore why GF don't bother writing one for him, they compensate by having you fight him as a scenario-less bonus boss instead.
Acerola doesn't have scenario because she is an actual loli (Lana is just loli look-alike) and everything about Mina just scream unfinished content/sequel bait.
