why doesnt the trainer die when their pokemon does earthquake or one of those ridiculous world destroying z moves

Control fire. It's not as hot as a naturally occurring fire(1000 degrees F). The Pokémon can control the heat and generally don't make it to hot in a battle

I always imagined most fire attacks tended to be kind of explosive in nature, and the blast is what causes the damage.
Also, grass Pokemon are just that much more resiliant than regular plants.

Because most of them aren't dry. It takes prolonged exposure to fire (or being covered in fuel) for fresh leaves to catch on fire. If anything, the furry and feathered animal-like pokemon are more flammable.

Because plants do not naturally burn. They absorb and retain water. It takes an exceptionally arid climate to start wildfires.

It's not "Real Fire." Even Fire types would die to real fire.
It's really the Pokémon harnessing universal energy constructs that can take any form. That's why Pikachu can't put people into cardiac arrest and Poison types don't decimate populations with their toxicity.
Because real living plants don't just burn up easily
