Knock Off isn't as prominent in Battle Spot (especially since it's 3v3 so you're not bringing in your Knock Off user everytime) so Eviolite is in Porygon2's firm grip in this metagame. Being able to take all kinds of hits and even outright counter some Pokemon with Trace makes it even better. I want to try to make a team with both Porygons like I did in XY.

If you can get him going, you can try to set up a mega blaziken sweep. About the only thing that can outspeed and OHKO Megamance. One mon uses wideguard, the other uses sunny day. Blaziken gets a free swords dance and speed boost. Flare blitz and bam.

I open with Focus sash Froslass on 3v3 battle spot and it feels really good eating double edge, Killing it with an ice beam and then Destiny bonding the following threat for a quick 2 for 1.

M-mence has never been a problem for me because I usually go with my life orb salamence and another intimidate user (I miss m-mawile), and then I 2HKO him with draco meteor, stone miss or another SE move.

After two intimidates he is pretty shit because almost everyone runs the physical variant.

Not that guy but yeah. Eviolite ups both defenses, so investing 252 in HP is worth it. About the other 252, it depends on what you want and depends on the pokemon.
Take Chansey for example, its SpD is so high you might as well make it Bold and give it 252 Def. That way it becomes super tankey both physically and specially.

What is a good answer to it?
Generally if it switches in on my Kartana I can eat the hit with my focus sash and then 1HKO it, but is there some secret to countering it? It's obnoxiously strong.

I couldn't think of a good item to put on it and the boost in attack power is nice.
I realize my team has no synergy for it's ability as m-chomp and losing chomps ability is pretty lame, however any enemy that brings out sandstorm gets royally thrashed so it has its upsides too.
I was thinking about switching to m-salamence.
