What's the best way to go about team building if you're new to competitive? Should I experiment with a bunch of mons and see what happens?
Pretty much, yeah, build a team with shit you think is good, see it being destroyed numerous times, and rework your team to counter what destroyed you.
Rinse and repeat.

You start by picking a meta that is above toddler level. Competitive Pokemon is the lowest form of 'competitive' you can get, just slightly below Smash.

Pick a strategy or mon you want to use, think about how you would play around its weaknesses, build a team around that.
Then experiment, battle people on Showdown with your test team, see which strategies destroy it, and start working on a counter to it. No team is perfect, but with practice you can develop ways to get around your known weaknesses.
Experiment with good mons. Realize when you get fucked by something. Change team to fix weakness. Have at least one check for everything (see ou threatlist).
There's teambuilding articles and shit on smogon.
If you're really having trouble, steal something from ou bazaar or rmt on smogon and try playing with that.
