I'm starting my Sun/Moon run for the first time.
Brief me about the game's dificulty. I found X/Y to be PISS EASY, specially with the Exp. Share on. I've been playing since Red/Blue and X/Y was the easiest game for me. I was way too overleveled.
Is Sun/Moon as easy? Should I turn off Exp. Share or turn it on? Does it work the same retarded way it does in X/Y? Any other tips for added difficulty other than doing a Nuzlocke?
Depends. If you use Alolamons only, it's more difficult because they are slow as shit.
Exp. Share is balanced this time. Not using it causes you to be severely underleveles in the endgame.
Switch it off and on again periodically. The trials are not that hard because you have 6 Pokemon, much like how XY was easy for its 3 mon Gym Leaders. but towards the end of the game it will ramp up.
Alternatively, leave it on but rotate a number of team members.

What worked best for me was no Exp Share, using a small team (my starter plus one per island I reached, so five at the end of the game). I was a little overleveled in the first two islands but it balanced out by the third and the rest was a good level of challenge.
I'll also second the suggestion to stick with Alolamons; they're not bad but the slower speeds means you'll normally be trading hits rather than sweeping teams outright with something like Alakazam.
And I found the single most important thing to make the big battles fun rather than one shot cakewalks: Give the Totems a chance to do their thing. I know its arguably handicapping yourself, but give most of them a turn to set up and the fights get a lot more fun. Also, if you're okay with a mild spoilerkill the first Wishiwashi the water totem summons, the next thing it summons makes the fight a lot more challenging.

If you really want it harder to the point of a self imposed challenge you should just turn it off and leave it that way
I'd imagine some of the totems can completely fuck over nuzlocke runs that weren't lucky enough to pick up an appropriate counter

No, I just want it harder in a way in that I can't wipe all trainers in the game with a single move, like I do in X/Y with Exp. Share.

Leaving it off the entire time while raising a full team can leave you a bit starved actually
It's... slightly easier than other games, I'd say. If you're fighting every trainer you meet, you'll be overlevelled, but otherwise you'll have a hard enough challenge.
In other words, turn off Exp. Share if you don't care about wasting time.
