For a pokemon hyped up to be as broken as it supposedly was, I was expecting more "broken-ness" from Celesteela. Not getting 3 shot by a staller.

Nope. And my setup with Gastrodon was 252 HP 244 Defense and 16 SpDef With an active Rain dance.

My opponent used Iron Defense like twice but that's for normal defense; not special. I have no idea what his stat was.

Pheromosa is literally mini-Deoxys-A.
Guzzlord is literally Chansey with an offensive Mew stapled to it.
Both Kartana and Buzzwole are Wurld of STR who don't believe in Special Stats.
Celesteela is literally Skarmory with Leech Seed, so no idea what his problem was.

I don't know what the best/common stat spread for celesteela is but it sounds like the main issue is your opponent was an idiot, since celesteela usually just leech seed/protects with the occasional max damage heavy slam or whatever.
