Depends on how long they denied as more information came out. For instance, the starter leak was highly atypical for how we usually get these leaks. Even now the best we have is "they just fucking showed up on /vp/ one day." The Chinese leaks were even more suspect initially because, you know, they were just text leaks from some chinese place. In retrospect, their more leak supporting qualities standout, especially once we began to get official releases of stuff no one else had guessed that matched up. Pretty much anything beyond the reveal of Mallow and the whole Trial thing is when people began entering real denial mode.
The Ultra Beasts being uncatchable is the biggest bit of denial there, even from the beginning. The closest Gamefreak has ever come were the Pokestar minigame battles, which are a completely different thing to how the Ultra Beasts were portrayed. The most basic aspect of Pokemon is "see that monster? You can catch it and use it." They might do it some day, in a serious plot capacity beyond a side quest movie minigame, but they'd probably make a bigger deal of it. The Ultra Beasts were just meant to be "New! Exciting! Strange!"
