What defines "ultra beast" other than being from Ultra Space. They're just pokemon from another dimension. What does that make Giratina? An ultra beast?

It's directly stated that being an "Ultra Beast" depends on the aura gained from the Ultra Wormholes. This energy dissipates over time.

The Ultra Beasts you catch in Beast Balls are freshly dropped out of the wormholes, and the Beast Boost ability is said to be that lingering energy. The auras of Totem Pokemon is said to be a lesser, residual form of that energy, that happened to seep into Alola in the past.

Since Solgaleo, Lunala, and by extension, Necrozma, have been in Alola for such a long time, their wormhole energy has fully faded, leading to them being considered "normal" Pokemon, despite originating in Ultra Space.

tl;dr: Solgaleo/Lunala/Necrozma and Nihlego/Xurkitree/Buzzwole/Pheromosa/Kartana/Celesteela/Guzzlord are ALL Ultra Beasts by virtue of coming from Ultra Space, but the former have lost their Auras, while the latter have not.

No, the humans become Fallers once they become exposed to Ultra Energy.
Lunala and Solgaleo probably are a separate case based on how freely they can travel between the two worlds, even as Cosmog. They may not even originate from Ultra Space, the game isn't even clear about that other than they came from a wormhole which could be from anywhere.

That's not exactly right.

Distortion World is parallel to our setting World as a counter balance, this means that if variables and constants are anything to go by, all other regular Poke Earths have a Distortion World serving as a counter balance.

It just so happens that Ultra Space is a Poke Earth that was ravished violently and has only Ultra Beasts in it.

We will never explore Outer Space, feels bad.
