UK and Ireland would be phenomenal. They could build on Ireland's ancient mythology really well. Could possibly play on the whole civil war/colonial thing but I'm not sure if they'd get too political. The residential trio could even be based off of the Irish goddess trio, The Morrigan, Badb and Macha being giant crows of some kind perhaps.

They could touch on Belfast's seafaring history, one of the legendaries could reside within the Giants causeway. I'd have high hopes for the regional dog too, it could be an Irish wolfhound.

The snowy region could be in the Scottish highlands. The Wales legendary could be a huge dragon. The biggest city in the region would be based off of London I guess.

Except China is only grey due to recent pollution, which would get whitewashed in any Pokémon game. China has a wide diversity of Biomes from Loess plateau in Shanxi to rocky highlands in Fujian to snowcapped peaks in Tibet and deserts in inner Mongolia. Pre-industrial China was actually quite beautiful and that's obviously where Gamefreak would take most of its inspiration.
