Also it's the only time I've ever done this. Friends keep telling me they've found piles of em on their playthrough and kinda sick of having abysmal luck.

I was on the same boat OP. I had never seen a wild shiny before gen VI. Then I got lucky and ran into a Bellsprout. From there onwards, I caught a decent haul of sparkles.
If you must have one, the safest and fastest method is chain fishing, though that limits you to fishable pokemon. My favorite method overall is just taking a stroll around the region raising encounter numbers on the detect tool (can't remember the name) so that I may find a shiny at some point. It's slow, but far more pleasing than chains or bicycle simulator.
So far I've got a shiny Mantine and Gloom doing this.
