Well, how about a reward system, you go out with a certain character, they give you an item as thanks and that item is based on that character.
Say you went out with Juniper on the Ferris Wheel, as thanks, she'd give a Choice Scarf. If you go on enough dates, you get a reusable item that only that character would give.
And if you beat the game while dating a character enough time, that character will always be in your room post credits.
