Ultra beasts should have been boss fights throughout the story. Squidamine being the last one after you defeat all her Pokemon but she should be undefeatable. She should sweep your entire team until down you last Pokemon which manages to cling on to its last bit of hp and that's when nebby should come in and blow her back to protect you and lily before Lusamine can deal the last blow. It was kind of disappointing how nebby didn't really do anything in it's evolved form other than ferry you across diminsions
