How do people in Bulbapedia know the EV yields of the new pokemon in Sun/Moon?

I am EV training and I am not sure if I should trust the EV yields stated in Bulbapedia

Ok, so, how do they know the base stats already? I always assumed they datamine the games in order to figure them out
