There's still a point, because you can breed perfect IV Pokemon so you don't have to scrounge for (or cheat in) bottlecaps.

Bottlecaps is cool for retaining Hidden Power and passing down specific IVs since it only checks them as perfect, but won't pass down when bred.

Because breeding is faster than leveling pokemon up to lvl 100 and bottle caps aren't common.

Breeding becomes exponentially faster the more you do it because your stock of high IV parents grows.
