If you notice, Zygarde looks much closer to an UB than a pokémon

It's not a UB. It's ability is in direct correlation with Xerneas and Yveltal and Zygarde is Kalos based. It's only in SM because the UBs are becoming a bigger and bigger threat, reaching faraway regions like Hoenn, and because of Lusamine, Ultra Wormholes are now ripping open freely so UBs can appear more often. Zygarde is in SM to get rid of the threat before it reaches Kalos.

Before you can start separating and assembling Zygarde's cells, Dexio tells you how Zygarde is in Alola yet it's supposed to be Kalos Guardian and asks the player if something bad is going to happen soon. UBs are hyped as a threat to the world and the fact that they are touching Hoenn and Sinnoh (which is why Anabel and Looker lost their memories), that means they can appear anywhere and Lusamine literally causes a bunch of Ultra Wormholes to rip open in order for her to reach the UB Dimension, which causes the UBs to appear in the postgame. There is no other threat in Alola big enough to warrant Zygarde coming out and trying to go all mecha guardian.

Connect the dots and you get Zygarde being in Alola to stop UBs.
