As much as I like Australia, please no tropical hot region after Alola. I am so sick of those tropical enviroments after the Hoenn remake and Alola.

Make a more milder region or pick a colder country. Also Australia is mostly desert, I want a better mix. Germany region feeling like Sinnoh would be goat or Italy which is both hot (south) and cold (north) in one

Swamps, ancient forests, red sand dunes, mangrove forests, cities, beaches, snowy mountains, big cities, huge farmlands, underground mines, coral reef.

i was thinking about this, but not really as a starter. i figured that it would be the 2 stage bug (see: Ariados but bug fire) but i think having it as a starter is a alternative

most likely change the grass type, being a kangaroo (Grass/fighting), having boxing gloves made out of broken twigs wrapped around it fists, first stage is a joey, its 2nd stage looking like a IRL kanga, 3rd evo like a beefed up second stage, possibly having one of those boxing helmets made from a hollow tree

OR

a more obvious choice, a koala (yes, another one) that is similar to the slacking line in how it evolves but looking like a komala, either being pure grass or grass/dark, taking on a more sinister design

no change, that is fucking brilliant, 10/10 holy shit, probably evolves like the kanga, having its 2nd evo look like the ILR animal

Fire/Poison Redback spider

although a good choice, i still think i would rather it to be the Ariados of the gen. my pick? easy, either a thorny devil or a frill-neck lizard

a frill neck lizard would be a perfect choice, it could go the krookodile line, becoming fierce and menacing and (possibly) having moxie and becoming fire dark. if this happens, kanga starters would be a thing and not koala (which i like better) because im stick to the rule of no overlapping starter types. its following the same line in all of the other starters, having 1st stage look like the IRL baby form, second stage being the IRL animal and 3rd beeing beefed up heaps. its frill neck will obviously be flames, similar to typhlosion's back. i could also see it going the fire/steel typing on final evo, because it could have metal plating like a durant.

not only are thorny devils a (relatively) well known Australian lizard, the look menacing as fuck (pic is a thorny devil). little bit of information, the thorny devil lizard lives in the middle of the desert of Australia, around a place called alice springs (mostly) this means that they are uncommonly seen by people which could explain the rareness of the starter pokemon. its spikes are used and a warning sigh to other animals that might think to eat it and are its defence mechanism against said animals. now imagine when it feels threatened, flames shoot out of the thorns and its body temp. skyrockets.
typing could be either fire/dragon, fire/electric (which i would love) or fire/ground
(interesting information i want to throw in, maybe could be somewhat in the pokedex:

as usual, 1st evo is baby and so on, because i am uncreative and its almost 1am.
also with the ability, it could be something that halves the damage taken from ground type attacks (making them only neutral) because it lives in the sand and takes double damage from flying types, as its natural predators are flying animals such as brown falcons. this would work work really well for fire/ground (making ground netrual) and fire/electric (making flying neutral and ground only 2x)

Haha I was just being trolly coming up with poison -types since it's Australia. Completely agree with your points. A frill-necked lizard would be cool, definitely reminiscent of Typhlosion since it would probably be bipedal (at least in battle) since Frill-necks run around on their hind legs when they're pissed.

Australia has loads of extinct megafauna that would work nicely for the grass starter slot.
