I was wondering about that myself. Litten and Torracat were both set up as mixed, fast, and frail. Suddenly, Incineroar is a slow physical attacker with decent bulk. It seems odd that there would be such a drastic shift in focus between evolutions.

pokemon evolution is not the same as actual evolution. Alola forms would be more close to actual evolution.

I've been convinced that Incineroar is a good pokemon. It has great bulk, a great bulky ability, and a very nice support move pool.
