They usually make the date based on a Pokemon's regional dex number or with a pun on the day/month and the Pokemon's name. With Ampharos I have no idea, I just found out on accident.

You have to hack the starters in, some guy in the pmd threads did it for me. You can do the same thing with a Sky rom, too.
