Because GF doesn't care about your autism, they simply chose what types they felt most fitting.
They already did the Psy/Dark/Fight triangle last gen anyways. The only other one that works is Rock/Fly/Fight, and I'm sure that GF is aware that people are sick of fighting type starters

The problem with those is that they use Grass and Fire, if we're talking about the standard Grass, Fire, and Water starters, they're most likely not going to use either as a subtype.

Let's be honest, we don't want Ghost type because it's 1x to fairy, but because it gives us immunity to Normal and Fighting. Too bad it doesn't exactly give us any SE's other than to Ghost.
That being said, at least this gen doesn't have an overflow of 4x weaknesses and in fact each Starter is immune to at least one type.
