For a very simple reason: there are plenty of instances where a non-defense oriented Eviolite would break the game. Defense is Pokémon is the underdog and there actually aren't a lot of good defensive mons. However, there are a lot of instances where an Attack/Special Attack Eviolite would make a lot of Pokémon absolutely superior to their evolutions.

I wouldn't mind speed though

An offensive Eviolite would be a Choice Band/Choice Specs with no drawbacks

Needless to say, broken as fuck

Eviolite, the item so powerful that all future decisions have to revolve around the fact that it exists (Megas and Alola forms instead of new evolutions), and you wonder why there aren't more variants of it
