The trials will be the things that cap off each island.
They will not be 100% of the gameplay. They will be the things built to through each island's progression.
The demo was to showcase these trials, since they're the new marquee feature of Sun/Moon.
So, no, it's not fair to judge the game entirely on them, since they're essentially resolution of the game's chapters.
