I think it's because they went to gridless movement. The sit-down and stand-up animations in XY/ORAS were strictly tied to the grid, they would have had to completely redo it for gridless movement. Without a grid there would have to be some system for detecting when you should sit down and when you're just moving and you bump into a bench. Plus they'd have to do some kind of terrible looking animation to make the player's model turn to a proper angle before sitting down.
