Now that we've seen their prevos, their typing and abilities make a lot more sense. They're not actually organic lion/bat creatures, they're the tiny little head seen inside the midstage cocoon.
So Solgaleo is actually a little head piloting a mech suit/armor containing cosmic energy, hence Psychic/Steel and Full Metal Body. Meanwhile Lunala is a head with skeletal hands protected by a web of cosmic energy (Shadow Shield) and most of its "body" is noncorporeal, hence Psychic/Ghost.

I'm actually convinced that, in-universe, Solgaleo and Lunala never actually existed, hence why they're not in the regional Pokedex. So for the first time ever, we have Legendary Pokemon that were literally just legends and nothing more. The Pokemon we see are artificial attempts to emulate the power in the legends, hence why you have to evolve a "regular" Pokemon and why they seem to be heads snapped on robot bodies.

Its the Nebula in the bag in both versions. They aren't 2 separate prevos, they are a single 2-stage prevo shared between them.
