That won't happen. Even in the extremely unlikely case they wiped out everything except for pokemon in the demo and demo text, we'd know what stat changes Ash-Greninja gets, and probably the stats of the first stage starters.

For one thing, for Christ's sake, it's GameFreak, not Nintendo making it.

For another, that "thorough job" would require so much extra effort that even the most hardworking developers would likely not feel the need to do it. Seriously. It is hundreds of times easier to just use the full game's assets and scrub the things that take up space.

Fact:Neither Gamefreak or Nintendo care enough to waste money paying people to remake a game from the ground up multiple times. It makes no sense with the knowledge we have now for them to do that.

Cleaning it up? maybe, but we'll still get any data used in the demo, notably base stats. Plus anything they need to keep in to prevent the game from shitting on itself
Encrypting it enough? That would mean it'll take a week instead of like 3 days
Making a completely new build? that causes so many other problems Game Freak would win the incompetent gamedev of the year award for even toying with the idea
