You misunderstand. Sun is a normal game. Moon is night during the daytime and night during nighttime. You can just change the clock on your system for the same effect.

Sun and Moon happen 12 hours appart from each other. This means that if you play Pokemon Moon at 3pm it will be 3am in the game, and if you play it at 3am, in the game it will be 3pm.

It's based on version, not time of day. Midday form isn't called that because it evolves in the day, it's called that because it only evolves into that form in Sun version. Same goes for Midnight and Moon version.
