The problem is that you can't "fix" the difficulty of Pokemon without changing core mechanics.

I'd prefer if they had typical Game Overs when you lose, going back to your last Save. That'd force some difficulty into it.

Unless you want tedious grinding or annoying A.I you can't really make the games very hard.

Kirby games are involving, have great level design and creative enemies

Pokemon games have dull and boring writing and tedious and unrewarding battles

The problem is that the games are too easy even underleveled.

That said I agree with what some said, a game can be easy if the rest of it is engaging and charming in other ways. The problem is that Pokémon has been failing at that since XY.

That's a matter of balance. In a game where trainers use more pokemon, it would be logical they hand out less experience.

I never looked into how experience works, now that I think about it. Is the formula the same for every game or does the amount of experience gained/needed vary between each game?

The games have never been engaging beyond the gameplay. The thing with XY and beyond is that they lacked the gameplay as well.
