Because that would make the method of getting all of those things entirely obsolete. Separating out currencies as a way of separating out aspects of gameplay is an ancient RPG tradition. It just works.

This is modern game design. Multiple currencies with no convertibility so different activities have incentive.

In fairness to OP, it would be nice to have something to spend your money on. That's why I liked the Villa in Platinum; it was a huge money sink and it was something to do with the fortune I'd amassed over the course of my adventure.
