We already know that Pokémon specific Z Moves require the Pokémon to know a certain move, such as how Snorlax needs to know Giga Impact in order to use Pulverizing Pancake. What if the generic Type Z-Crystals make different Z Moves from different ordinary moves? Like, what if Electrium Z turns Thunderbolt into one kind of Z Move, but turns Wild Charge into another?

I actually haven't been keeping up with info on Z-moves, are they restricted to Pokemon of the same type are can any Pokemon use a Z-move that corresponds to the same type as a regular move?

I think it's confirmed that each type get one for physical and other for special, the rest are pokemon exclusive move. There were a video that showed a Z move of type we saw but was different because it was physical.
