We don't know how Rockruff evolves yet. In the description it says the evolution of Solgaleo and Lunala make it evolve that way. Later gens could require moondust or sunsparks as item or something

Legendaries being split up is standard. Older mons coming back as version exclusive is, too. But there wouldn't be any justification for Rockruff's evos to stay that way. It will either be something like a day/night evolution, or it will be a soft version exclusive and you'll need solgaleo or lunala in your party to evolve him, considering its them specifically rockruff's evolutions are triggered by. I'm sure Solgaleo and Lunala's future appearances will be version split.

The beauty stat was still a thing in Gen V but as a hidden stat you couldn't manipulate.
