there is no evidence that it doesn't take damage from scald. it probably does take damage otherwise they would have said "absorbs water attacks to raise it's defense drastically" rather than "when it's hit by a water attack it's defense raises drastically.

There's also a held berry you could use to just get a SpDef boost as well when hit by a special attack. Switch him in on a Scald, and if he lives it with more than 40% health, he can take the next Scald before using a recovery move (or Rest if need be) and then be set to do whatever it does at +4/+1 defenses (more likely +2/+1 and a switching opponent). It's gimmick city but it might be a gimmick pokemon all the way down anyway.
