I'm getting both anyway so I'm happy that they're changing so much to the Pokemon formula with these games and I fully welcome it.
I mostly play Pokemon at night so it works out.

Time in both games works normally on real time like all the other games, there are just a few story scenes where time is forced to be day/night depending on the version. They confirmed this on the site. The only thing you'd be doing is actually making it so time is almost never "normal."

No, they confirmed Moon is always twelve hours ahead, there's just story scenes in each that happen at certain times of day regardless of RTC
