Anyone else feel like this series just isn't living up to it's potential? I mean yeah, it's fun, but I feel like there could be so much more done with the whole concept.
Everyone who's been playing the series knows this. This is nothing new.

Game freak tapped into a gold mine, but they haven't done too much different

Some games get closer to this potential than others.
There are now as many pokemon as there are tumblr genders.
Of course it isn't. You'd need to be Digimon to do that. And be marketed parallel to the main series so as to not offend the kiddies.
They're trying their best with the spinoff but yeah, there's a lot of interesting ideas that they haven't tapped into.

And what exactly is that potential?
I'm tired of this nebulous "dude there's so much more they could do" crap. What aspects of this setting haven't been capitalized on and how could they implement them?
Compare it with Neopets
Gamefreak is doing it just fine

I can tell you why. BECAUSE NOTHING IN POKEMON MAKES FUCKING SENSE THAT'S WHY
Literally nothing lives up to its "full potential"
Myself, I like it for what it is, not what it isn't
