I remember beating the game just fine with Squirtle, Bulbasaur, Pidgeotto, Butterfree, Pikachu and Charizard.

Trainers were unbelievably bad in Gen I. The ONLY source of challenge in the game is not knowing what the fuck anything does. Now that you do know what moves do what, there's nothing left for you.

Normal is overpowered in Gen 1 (which is why Tauros is so damn good).
I personally like Mega Punch on Pikachu but either Mega Kick or Mega Punch are fine. I wouldn't bother with Skull Bash though.
Seismic Toss is for coverage. Thunderbolt over Thunder for accuracy (seriously, you don't need Thunder in Gen 1, but feel free to put it on something else. I'd suggest not putting it on Pikachu though) and Thunder Wave for paralysis hax because Gen 1 is so utterly broken that paralysis can be god-tier at times.Jolteon is better competitively, FYI.

I should add that I actually use Double Team over Seismic Toss, because Double Team just makes it easy to destroy everything. You can get +6 with ease.

Nidoking is fun but far from the strongest.
Also, the game is more fun to play without beating it in two hours, but that's just me.
