Why would solgaleo be fire? Solgaleo has as much reason to be fire as solrock, sunkern and sunflora.

I've played with this idea in many fan games, and I think it's a bit overkill to double things. If a Pokemon is doubly-typed, I think it should get 50% more weakness and 50% more resistance, and immunities are unchanged. No bonus to STAB

Triple Types would be such an easy thing to implement. Just make super effective moves cap at x4 and nve moves cap at x0.25 so it doesn't become OP. They could really market it by making it "special" and give it to certain Pokémon like Solgaleo and Lunala.

There should be something like "trace types" where a Pokemon is given small traces of a certain type based on its appearance or something. For instance, Pokemon like, say, Granbull would have trace amounts of the Steel type. The trace type would add a small boost/benefit to certain moves, but I haven't really put a whole lot of thought into it yet. Then again, abilities have a similar function already so I don't know.

Instead maybe they should change the mechanic, that a dual type Pokemon has a primary type, and a secondary type, and that it takes more depending on which is which.

So like a Pokemon like Gligar is Ground Flying, his primary is Ground so it would take the regular SE damage on that, however Flying would be secondary so SE moves would only do .5x extra damage instead of double. So an Ice move would do 2.5x more damage, while a fighting type move would do .75, or maybe .66.

This would really change the dynamic of every single Pokemon. Some would benefit greatly from this [Pokemon that tend to have 2 really shitty types, would not longer be AS shitty, like Parasect for example].

Well obviously the extra types wouldn't be given to something if it fucks shit up like that, use your brains. Giving the Dragon type to Charizard and Gyarados doesn't mean GameFreak are gonna suddenly shit out a Grass/Ice/Bug/Steel type Dry Skin Pokemon that only knows Sunny Day and a Fire/Rock/Flying type Adaptability Pokemon that knows the move Flying Volcano Rocks.
