There's like zero fire types in every region and grass starter is always for quirky "hard mode" runs. How do you stand having your token water type be a starter when there's so many great choices?

Literally depends on the game. Meganium and Serperior are borderline useless in their respective games. Both are hard mode.
What's stopping you from having a Gyarados? Your autism? Just use your water starter and a Gyarados, it's fucking in-game who gives a shit
