I started breeding pokemon and am now breeding a 5IV Rampardos with a 5IV Tyranitar. Can anyone help me figure out why they only produce 3IV male Cranidos?

Well it takes a long ass time to do it with two 5iv mons. Most people use a 6iv ditto as one of the parents to make the process go faster. Do that and use a destiny knot. Should get a perfect 5iv cranidos within 2-3 batches.

Cranidos has a higher male rate than female. Also, the offspring will always be the species of the mother, if you want Larvitars you need a Male rampardos to fuck a female tyrannitar

Assuming you're breeding in Gen 6, brush up on your breeding know-how.
A parent holding an Everstone guarantees that their nature will be passed down.
A parent holding a Power item (Power Bracer, Power Lens, etc), will pass on their IV for the associated stat.
A parent holding a Destiny Knot will pass on 5 of the parents' 12 total IVs (so even from the parent not holding it) randomly to offspring.
Cranidos has a very skewed gender ratio. At 12.5%, your odds of hatching a female Cranidos are 1 in 8.
In addition, the species hatched is determined by whichever species the mother is. You will never hatch a Larvitar from a Male Tyranitar and a Female Rampardos. Only a Female Tyranitar will result in a Larvitar.
