What do you think are the best moves of each Type---like in terms of overall usefulness both in-game and competitively.
I feel like I can safely say for Ice it's Ice Beam, Water it's Surf, Ground it's Earthquake, Poison it's Toxic, Psychic it's Psychic, and Fairy it's Moonblast, but I'm not so sure on the others...like what's the preferred Steel move, Bullet Punch?

I think the best steel moves are probably Gyro Ball/Heavy Slam because steel-types tend to be slow and heavy.
The real question is, what's the best Normal move?

There cant be a best move because there's way to many thing to calculate, ranging from basic status/special/physical type of moves, to added effects vs overall damage, accuracy and utility both in theory and in practice because of the different metas.
Not to mention how certain moves are good on some pokemon but not others. Things like will-o-wisp don't work on something like charizard, but are amazing in the hands of sableye and talonflame. And even attacking moves can follow this route, like rock slide being outclassed by rock tomb if its a breloom we're talking about.
Not one move can claim to be the best, and I think the absolute closest you can get is that brave bird is the best attacking flying type move, and even that is debatable.
