I would like to approach the next games in a way that makes them more challenging but still being relatively fun, what's the best kind of run?
unevolved run. That's probably why i enjoyed oras so much.

Games are getting dumbed down constantly, I am getting disappointed every gen by lack of difficulty and lackluster lategame content. Seeing OP screenshot makes me doubt it will be any different this time.

While I don't think the games will be as difficult as gens 3-5, you have a terrible memory if you think 2 pokemon bosses is something new.

The bosses have always had 2-3 pokemon at slightly above average levels.
HOWEVER the players have power-creeped to hell. Gen 6 practically forced you to have 4 high-powered pokemon on your team early in the game without throwing a single pokeball. meanwhile, experience share overleveled everything.
