Will SOS battles replace horde battles?
I mean imagine if a totem pokemon gives you double or triple the EVs when defeated or even better if it can spawn infinite minions so you can be done training with a single battle

That implies totem pokemon rebattle you. Could actually be kind of cool though, if they leveled up each time and eventually you could fight a lv100 gumshoos who would summon other high level ones.
I would expect if horde battles still exist they will be faster and more controllable than SOS battle.
Horde pokemon has three things going for it:
1) you decide when and where, which gives you a high probability of getting what you need without needing to run. Totem doesn't yet have a known mechanic, but I expect its closer to shaking grass than just using sweet scent
2) it has a predictable number of pokemon, so tracking is easy. SOS is 1+?.
3)its incredibly quick with multihit moves. SOS looks like you would have to potentially wait for a summon, kill it. wait for a summon, kill it. wait...
Horde wins, horde has always won, horde will always win.

i swear i remember reading somewhere that you could run into totem pokemon in the wild but i don't remember where and now i'm not sure if it was just a wet dream of mine
They mentioned that some Pokemon that aren't Totem can also summon
